Best vacation spot in Mexico?

Planning an Anniversary vacation from March 6th – 13th. My husband and I are fluent in Spanish but Ive never been. He’s been to Jalisco and many other places but I wouldnt call them vacation spots. Im looking for a city to stay in but Im also thinking a beach would be romantic. Im very “outgoing” so I would like to horseback ride and go hiking too. I live in SoCal so I was just going to take a TJ plane to wherever. I also want to stay in a very romantic hotel if there is any there (like the Monte Carlo Suite with a jaccuzzi in your room overlookin the las vegas strip kind of thing). I dont wanna spend more than $3000 on everything either (Not including shopping a recreational activites). Thanks

Personally I would highly recommend Huatulco, in the southern state of Oaxaca.

Is a gorgeous spot, quiet and romantic. There are a few hotels that have all-inclusive packages, which is the way to go in Huatulco. If you are looking for a romantic week this is your spot.

Plus if you get a little claustrophobic in a room (lol) there ’s guided tours through the jungle which lead to virgin beaches (meaning beaches that have not been developed at all, so they remain in their natural state) and to get there you can either quad, take a boat or back horse ride.
